Place two litchis in a double old fashioned glass with the diced pineapple and muddle.
Add the rum, wine, litchi syrup, the lime juice, a good handful of mint and stir vigorously (incorporate the mint without bruising!). Top halfway with ice and stir vigorously again.
Fill the glass with ice, garnish with pineapple and mint and use a bamboo straw.
