Tropical Rosé Mojito

Serves one | Serve in a tumbler

  • Two litchis, canned
  • Pineapple diced 60ml
  • Litchi syrup (from can) 30ml
  • Warwick First Lady Rosé 60ml
  • Copeland Rum 30ml
  • Juice of half a lime
  • Lots of mint 
  1. Place two litchis in a double old fashioned glass with the diced pineapple and muddle.

  2. Add the rum, wine, litchi syrup, the lime juice, a good handful of mint and stir vigorously (incorporate the mint without bruising!). Top halfway with ice and stir vigorously again.

  3. Fill the glass with ice, garnish with pineapple and mint and use a bamboo straw.
