The harvesting of the 2007 vintage proved to be very challenging, but was well worth the effort in the end. Cool weather and little rain combined to create a very favourable vintage. The Chardonnay was the first to be harvested, revealing exceptional fruit flavours and fullness in the vineyard, which resulted in an excellent wine. The Sauvignon Blanc was very intensely perfumed – our Professor Black holds a few surprises in store for the palate... Due to the chill in the air, the reds were very slow to ripen, yet the grapes were of a rich, deep colour and acquired a well-rounded flavour. Although we yielded a very small crop, the quality of the wine attained has exceeded our expectations.
